Ingredients
200g Focaccia mix
Half a teaspoon of salt
40g of sourdough starter
20g olive oil
200g of Beetroot juice
Alternatively you can make your own Beetroot Juice: Blend well 2 plain cooked beetroots with 200g water.
Method
Mix all ingredients together, cover and leave in a warm place for up to 8 hours.
Take out the dough, spread and fold a few times till smooth.
Roll out so the dough is about half an inch thick.
Cut into thin strips and twist gently.
Place onto a baking tray, about half an inch apart.
Cover and prove for an hour.
Preheat the oven to 200*C.
Brush or spray water before placing in the oven.
Bake for 30 minutes then turn off the oven and open the door, leave till cooled.
To make without beetroot simply use 200 g of water.
Add herbs like rosemary or thyme or seeds to the dough before shaping or sprinkle with sea salt.
Store the grissini in an airtight container to keep them nice and crispy.
